A second use-Antoinette Little, owner of Antoinette Chocolatier in Phillipsburg, says most years leftovers aren’t a problem because she makes chocolates fresh daily for what she thinks she’ll be able to sell in the shop. And after five years in business, Little says she has a pretty good handle on what customers want. When she does have holiday excess, the solid and hollow chocolates can be melted back down. If the chocolate’s been colored, it too can be melted down, as long as it’s kept separate. Filled chocolates are either put on sale, or given away to family, neighbors or local schools. “Most of the time I don’t have anything leftover,” Little says. But when she does, her creativity takes over. Some of the chocolates Little sells are filled with flavored ganache — an emulsion of cream, chocolate and butter. She creates fillings such as Chipotle, Espresso Coffee, Brandy, Hazelnut, Orange Cognac and Raspberry. _________________ holiday chocolate shapes |
